Our Food Philosophy
Any one who has visited Vietnam will be aware of the the "Street Food Culture" that exist through out the country. From the hawkers that walk the street selling delicious snacks like Trứng Cút (quail eggs), Bánh Tráng Mè (sesame rice crackers) or pushing their trolleys complete with an in built fire selling Chuối Chiên (Bannana fritters) or Khoai Lang Chiên (fried sweet potato) to the small carts set up outside markets selling Bánh Mì (bread with all sorts of delicious fillings), Nước Mía (sugar cane juice) to the small home restaurants that verge out on to the streets selling favourites like Phở, Bún Bò Huế, Mì Hoành Thánh and Bò Kho.
At Noos Noodles we try to bring a bit of this "Street Food Culture" to you. Our aim is to provide an authentic taste to our dishes. All our dishes are based on original Vietnamese recipes. When we took over the old Thai restaurant we knew the kitchen wasn't up to the demands required of our menu. We totally stripped and rebuilt the kitchen, replacing the the old Wok cooker with a brand new double chimney style which provides for better heating. To get that charcoal flavour in our grilled dishes we installed a char griller which is almost unheard of in Vietnamese/Chinese restaurants. We also installed a noodle cooker so that we can meet that high demand for our noodle soups.
